The World Culinary Tour (WCT) is the programme within ICAA that classifies the disciplines of the culinary arts in two levels, Arts and Disciplines, with a structural pathway toward the World Culinary Festival.
What WCT does
WCT operates a ranking and classification system for the disciplines of the culinary arts. It integrates existing associations and professional bodies where they exist and develops categories regionally where they do not, giving practitioners a structured route from local recognition toward the convergence of WCF.
Two canonical levels
WCT covers the full scope of the culinary arts, organised in two levels. At the first level, WCT recognises Arts, domains of the culinary arts such as cuisine, coffee, pastry and chocolate, street food, tea, and brewing and fermentation, with others to follow in cycle. Within each Art, WCT operates Disciplines, defined technical specialities with their own judging bodies, formats and broadcast architecture.

Classification in WCT is structural: it connects recognised disciplines and their practitioners to the World Culinary Festival, where the framework convenes in summit. For accredited professionals, WCT is the route through which classification becomes visibility and visibility becomes participation.
