The International Culinary Arts Association (ICAA) is the institutional pillar of The Universal Table, the body that establishes the standards, accreditation and governance through which the culinary arts are recognised.

What ICAA is

ICAA defines the standards of the culinary arts, accredits and legitimises those who meet them, classifies the disciplines through which the field is practised, and accompanies new expressions of the field as they emerge.

ICAA is a structured international system of legitimacy, progression and recognition for the culinary arts.

ICAA is not a ranking, a club, a prize or a prestige network. Recognition rests on verified status, never on visibility alone.

Two acts, one ladder

ICAA works as a ladder, not a single gate. Membership is the entry: it opens the system to professionals and institutions before formal evaluation. Accreditation is the verified status: the evidence-based recognition that carries the seal. Membership signals belonging and participation; accreditation signals verified competence. The two are kept visibly and deliberately distinct.

HOW ICAA OPERATES

The instruments of the system

ICAA accredits and legitimises through WIBAL, classifies and projects the disciplines of the culinary arts through WCT, and accompanies new expressions through CCF. Verified status is made public and searchable through the Registry. Together these instruments turn professional quality into recognition that holds across borders.
